If I understand correct You want to change VO/FA - Vehicle Order or FahrzeugAusstatung.
I am also new at this, but from what I know, You will need a full database at the beginning.
Then You will need a bmw option code for this. That is what is decoded from vin for example in bimmer.work. I think Dynamic esa is 191.
This code then later You will need to add to your VO in Esys.

I have not many information about BMW bikes. For cars for example there are some options, that can be easy coded and they work if all hardware is present on the car.
Then there are some options that needs FSC (freischaltcode) code to work. Some of thous can be generated from more professional coders and some needs to be bought from BMW dealer. For example I bought carplay, lifetime maps for my car for 70 euros. At BMW dealer this would cost me for about 400-500 euros.

I dont know why - but some options require BMW generated original FSC code - for example for SLI (speed limit information) for my BMW car.

I have not done VO coding myself, but I can give you some links how it is done with car. With the bike the principle is the same.
I have managed to do a full bike software update from the bimmerdoc youtube channel info videos.

If You cant figure it out You could contact one guy in EsysUltra Telegram chat. He's nickname is Nine90 - he is also active in many other forums. I have contacted him and he is quite responsive and usually helps. He is a professional coder and can get You a original BMW FSC code too, if needed.
He also has an experience with bike coding and could answer right away - if these options You want can be coded at home without anything or You will need some additional help or fsc.

Please keep us up to speed how this goes. I am also very interested. My bike has almost all the options, but maybe something is missing.
To my understanding - such options as all PRO riding modes should be possible to code. But I cant tell for sure.

Update:

I contacted Nine90 and he explained when some self generated fsc codes work - only when the ecu is cracked. For bike there is nothing cracked as the market is to small. For cars some Headunits are cracked and they accept the nonBMW generated fsc codes.

For example for bike to enable PRO riding modes, an genuine FSC will be needed.

Es bestehen Unsicherheiten hinsichtlich eines FA-Wechsels. Durch Ändern des FA kann eine Option verfügbar gemacht werden, beim Hinzufügen einer Sicherheitsoption ist dies jedoch häufig nicht möglich. Der Grund dafür, dass MSR nicht zum FA hinzugefügt werden kann, liegt darin, dass das Steuergerät diese Informationen nicht verarbeiten kann. Motorräder, bei denen das MSR aktiv ist, haben eine Version 2 oder 3 des Steuergeräts verbaut.

Der Einsatz eines FCS ist nur erforderlich, wenn diese Option angeboten, aber bei der Bestellung nicht ausgewählt wurde. Zum Beispiel „Dynamic Pro“ oder „Quickshifter“.

Seien Sie gewarnt, wenn Sicherheitssysteme geändert oder hinzugefügt werden. Dies kann zu Problemen mit anderen Sicherheitssystemen wie ABS oder ESP führen.

Genau! Wenn die Hardware fuer dieser Option ist nicht da, dann kodierung kann nicht helfen.
Ich glaube Dynamic Esa auch ist nicht etwas was einfach kodiert moegklisch ist. Da muss mann dann bmw Part Catalog schauen ob alle Parts gleische ist - mit und ohne dieser Option.
